S'mores Cookies

A friend of mine is hosting a white elephant and cookie exchange party this weekend, and I took that as a sign that I needed to create a new cookie recipe.

S’mores are an all-time favorite of mine. Just seeing graham crackers sends my mind whirling into memories of summer time, campfires, delicious s’mores, and being sticky…head to toe. Mr. Indulgent, however, gets to the memory of “sticky” and loses interest.

So, it was my hope that because the s’more would be in cookie form and therefore not a complete mess, that I could give my husband the opportunity to enjoy s’mores with his wife (and his wife an excuse to eat s’mores more often). According to Mr. Indulgent, I succeeded!

I’m kinda lazy and prefer the dump and go cookie, but if you’re more willing to bake a “some assembly required” cookie, I think these could be great with whole graham cracker bases and the marshmallows smooshed into the tops (instead of the crumbles and marshmallows being mixed in). Maybe it’d be a good job for little helping hands?

All I know is that however they are assembled, they are delicious. Wonderfully chocolatey with gooey bits of marshmallow, and a little crunch from the graham crackers…and my favorite part: they aren’t too rich, so I can keep coming back for more without getting sick! Well, I guess that is both good and bad…

S'mores Cookies

  • Ingredients:
  • 1/2 cup brown sugar (packed)
  • 1/2 cup sugar
  • 1/2 cup butter (softened)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/3 cup rye flour
  • 2/3 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 tablespoons cocoa powder
  • 3 graham crackers (crumbled, four sections / cracker)
  • 1 cup mini marshmallows
  • 1/2 cup chocolate morsels (I've used both semi-sweet and dark)

Preheat oven to 400F. In a mixing bowl, beat together butter, brown sugar, granulated sugar, egg, and vanilla.

In separate bowl, sift together rye flour, all purpose flour, cocoa powder, baking powder, and salt.

Add dry ingredients to wet and mix until combined.

Stir in marshmallows, chocolate chips, and graham crackers.

Line cookie sheet with parchment paper, and scoop dough by the spoonful. Leave 2 inches between cookies.

Bake for 10-14 minutes. Allow to cool on cookie sheet for 5 min, then move to cooling rack to finish.
